Lost Hills is the home of our primary pistachio processing facility and all of our almond manufacturing. Quality begins during harvest. Our pistachios are shaken from the trees, never touching the ground, and quickly stored in silos in less than 24 hours. Freshly harvested pistachios are hulled in the largest hulling operation in the world at our Lost Hills facility. Once cleaned and hulled, our pistachios dry using the Sun Curve method, which mimics nature’s gentle drying, in preparation for storage. Our pistachio silo tank farm is the largest in the world and safely ensures an uninterrupted supply for our customers. Paramount Farms is leading the industry as the only pistachio processor to employ steam pasteurization.  Our new Buhler Barth pasteurizer delivers a 5-log reduction of pathogens. We employ new methods of sweeping almonds during harvest that reduce dust by 75% and significantly improve environmental air quality. Paramount commissioned a new almond pre-processing facility in 2011.  Unlike any other in the world, it is unrivaled in its ability to remove foreign material and process the highest quality almonds. Our new almond pre-processing facility uniquely employs the world’s most current technology to ensure the most consistent and highest quality almonds. Paramount’s almond cold storage was designed with tremendous capacity to ensure an uninterrupted supply to our customers. Our almond manufacturing facility is also a customized operation unlike any other in the world, designed with the capability to provide the widest range of products with consistent quality to specification. At the hub of our almond manufacturing capability are controls to enable precise and consistent specifications. Paramount also employs steam pasteurization capability approved by the Almond Board of California. Dry roasted, sliced almonds are flavored for our Almond Accents product line. We have a range of packaging capabilities to deliver our almonds to market to best suit our customers’ needs.
